Planted tank and feeding large Congo's & Serpae's & later Denisonii ...
What would you use, flakes or pellets?
What brand(s)?
I currently feed New Life Spectrum ...

I'd use pellets over flakes. Make sure to soak them a bit so the fish could digest them properly. For the brand, I'd go with new life spectrum. Top notch food.

By the way, did you see those nice Congo Tetras at the auction? Beautiful looking fish.
