Question for experienced shrimp keepers

So I have been looking into food for shrimps. I think I have a tendency to maybe go overboard with planning things. I know having a varied diet is good and the plan right now is to get repashy gel good, blanched veggies and bacter AE. All three of those foods can also be used for other fish I want to eventually put in the tank.

But I am a little worried. This is a very protein light diet for the shrimps and I assume they also need proteins. But I get conflicting info on this with some people saying too much protein will also hurt them. I might be overthinking things.

My tank also has copepods and I know shrimps can eat one of those once in a while (rarely). Maybe I can get one of the repashy food that has proteins in it instead of soylent green? What do you all feed your shrimps?

I also saw online that some people mix Montmorillonite Clay with bacter AE to make a sort of shake, with the clay being really good for colourful healthy shrimplets. I can't seem to find powdered form of it, just sort of clay pebbles you put directly in an aquarium or in a filter. Does anyone have experience with this? Is it okay if I just get one of those pebbles? Can I forego it entirely? Or is there somewhere in the region that sells this product in powdered form so I can add it to my tank from time to time?

I also have one last question and that concerns water changes.

I know shrimps are sensitive to water changes. I considered doing a top off rather than straight water changes but that can cause a mineral buildup. I am aiming for a heavily planted tank through so those minerals will get sucked up by plants. What does everyone do for water change? 20% weekly? Top off because lots of plants? Just curious on some perspective here since, again, I see a lot of conflicting opinions.
