Easy Skimmer Question

I'm currently running a Euro-Reef RS130... it's been great and been running for quite a while.

The exhaust tube is adjustable with 2 settings "Open" and "Closed" indicating on a sliding scale how much air gets in.

My question is this, people often refer to skimming 'wet' to remove excess nutrients from the system? how do I do this? by running the valve more 'Open' or 'Closed'

Skimming more wet is done by having it more closed and allowing a more watery collection

Here people's thoughts on wet vs dry skimming as well.
